Broccoli rabe or rapini are the leaves of the immature broccoli plant. This delicacy originates in the deep northern mountains of italy and grow primarily in cold climates. This plant is celebrated in the small villages for saving them from winter famine many times. It can be used for soup, ground up into a broth or (my favorite) stir fried in oil with peppers and garlic.
